Ingredients
- 2 cups grated fresh pumpkin
- 1 cup all-purpose flour
- 2 tablespoons sugar
- 1 teaspoon ground cinnamon
- 1/2 teaspoon salt
- 1/2 teaspoon baking powder
- 2 eggs
- 1/4 cup milk
- Vegetable oil for frying
Instructions
- In a large bowl, combine the grated pumpkin, flour, sugar, cinnamon, salt, and baking powder.
- In a separate bowl, whisk together the eggs and milk.
- Pour the egg mixture into the pumpkin mixture and stir until well combined.
- Heat the vegetable oil in a frying pan over medium heat.
- Drop spoonfuls of the pumpkin batter into the hot oil and fry until golden brown on both sides.
- Remove the fritters from the oil and place them on a paper towel to drain excess oil.
- Serve the pumpkin fritters warm and enjoy!
