Ingredients

  • 2 bunches of pumpkin leaves, washed and chopped
  • 1 onion, finely chopped
  • 2 tomatoes, chopped
  • 2 tablespoons peanut butter
  • 1 tablespoon cooking oil
  • Salt and pepper to taste

Instructions

  1. Heat the cooking oil in a large pot over medium heat.
  2. Add the chopped onions and sauté until they are soft and translucent.
  3. Add the chopped tomatoes and cook until they are soft.
  4. Stir in the peanut butter and mix well with the vegetables.
  5. Add the chopped pumpkin leaves to the pot and stir to combine with the other ingredients.
  6. Cover the pot and let the muboora cook for about 15-20 minutes, stirring occasionally, until the leaves are tender.
  7. Season with salt and pepper to taste.
  8. Remove from heat and serve hot.
