Ingredients
- 2 bunches of pumpkin leaves, washed and chopped
- 1 onion, finely chopped
- 2 tomatoes, chopped
- 2 tablespoons peanut butter
- 1 tablespoon cooking oil
- Salt and pepper to taste
Instructions
- Heat the cooking oil in a large pot over medium heat.
- Add the chopped onions and sauté until they are soft and translucent.
- Add the chopped tomatoes and cook until they are soft.
- Stir in the peanut butter and mix well with the vegetables.
- Add the chopped pumpkin leaves to the pot and stir to combine with the other ingredients.
- Cover the pot and let the muboora cook for about 15-20 minutes, stirring occasionally, until the leaves are tender.
- Season with salt and pepper to taste.
- Remove from heat and serve hot.
