Pumpkin Leaves With Smoked Fish

Ingredients

  • 1 bunch of pumpkin leaves, washed and chopped
  • 1 medium-sized smoked fish, deboned and flaked
  • 1 onion, chopped
  • 2 tomatoes, chopped
  • 2 tablespoons of red palm oil
  • 1 scotch bonnet pepper, chopped (optional for heat)
  • Salt and pepper to taste

Instructions

  1. Heat the red palm oil in a large pot over medium heat.
  2. Add the chopped onions and sauté until translucent.
  3. Add the chopped tomatoes and cook until softened.
  4. Add the flaked smoked fish and stir to combine with the vegetables.
  5. Add the chopped pumpkin leaves and stir well to combine with the fish and vegetables.
  6. Cover the pot and let the pumpkin leaves cook for about 10-15 minutes, stirring occasionally.
  7. Season with salt and pepper to taste.
  8. Serve hot and enjoy!
