Pumpkin Leaves With Smoked Fish

Ingredients
- 1 bunch of pumpkin leaves, washed and chopped

- 2 tablespoons of red palm oil
- 1 scotch bonnet pepper, chopped (optional for heat)
- Salt and pepper to taste
Instructions
- Heat the red palm oil in a large pot over medium heat.
- Add the chopped onions and sauté until translucent.
- Add the chopped tomatoes and cook until softened.
- Add the flaked smoked fish and stir to combine with the vegetables.
- Add the chopped pumpkin leaves and stir well to combine with the fish and vegetables.
- Cover the pot and let the pumpkin leaves cook for about 10-15 minutes, stirring occasionally.
- Season with salt and pepper to taste.
- Serve hot and enjoy!
