Pumpkin Paradise (Тыквенный суп)
Тыквенный суп, also known as Pumpkin Paradise, is a traditional Belarusian dish that is perfect for the autumn season. This creamy and flavorful soup is a comforting and nutritious meal that will warm you up on a chilly day.
Ingredients
- 1 small pumpkin, peeled and diced
- 1 onion, chopped
- 2 cloves garlic, minced
- 4 cups vegetable broth
- 1 cup heavy cream
- Salt and pepper to taste
- 2 tablespoons olive oil
Instructions
- In a large pot, heat the olive oil over medium heat.
- Add the chopped onion and garlic, and sauté until the onion is translucent.
- Add the diced pumpkin and vegetable broth to the pot. Bring to a boil, then reduce heat and simmer for 20 minutes, or until the pumpkin is tender.
- Using an immersion blender, puree the soup until smooth.
- Stir in the heavy cream and season with salt and pepper to taste.
