Ingredients

  • 4 cups grated pumpkin
  • 1 cup sugar
  • 1 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/4 tsp salt
  • 1/2 cup vegetable oil
  • 1 package of phyllo dough
  • 1/2 cup water

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, mix the grated pumpkin, sugar, cinnamon, nutmeg, and salt.
  3. Place one sheet of phyllo dough on a clean surface and brush it with vegetable oil. Repeat with 5 more sheets, stacking them on top of each other.
  4. Spread the pumpkin filling over the phyllo dough stack.
  5. Roll the phyllo dough and pumpkin filling into a log, then coil it into a spiral shape and place it in a greased baking dish.
  6. Brush the top with water and bake for 45 minutes, or until golden brown.
  7. Let it cool before serving.
