Pumpkin pastry, also known as Bulgarian Sunrise or Tikvenik, is a traditional Bulgarian dish that is perfect for breakfast or dessert. This flaky pastry is filled with a sweet and spiced pumpkin filling, making it a delightful treat for any occasion.
Ingredients
- 4 cups grated pumpkin
- 1 cup sugar
- 1 tsp ground cinnamon
- 1/2 tsp ground nutmeg
- 1/4 tsp salt
- 1/2 cup vegetable oil
- 1 package of phyllo dough
- 1/2 cup water
Instructions
- Preheat the oven to 350°F (175°C).
- In a large bowl, mix the grated pumpkin, sugar, cinnamon, nutmeg, and salt.
- Place one sheet of phyllo dough on a clean surface and brush it with vegetable oil. Repeat with 5 more sheets, stacking them on top of each other.
- Spread the pumpkin filling over the phyllo dough stack.
- Roll the phyllo dough and pumpkin filling into a log, then coil it into a spiral shape and place it in a greased baking dish.
- Brush the top with water and bake for 45 minutes, or until golden brown.
- Let it cool before serving.
