Ingredients

  • 1 kg pumpkin, grated
  • 200g walnuts, chopped
  • 500g filo pastry sheets
  • 200g sugar
  • 100g butter, melted
  • 1 tsp cinnamon
  • 1/2 tsp salt

Instructions

  1. Preheat the oven to 180°C (350°F).
  2. In a large bowl, mix the grated pumpkin, chopped walnuts, sugar, cinnamon, and salt.
  3. Brush a baking dish with melted butter.
  4. Layer the filo pastry sheets, brushing each sheet with melted butter.
  5. Spread the pumpkin and walnut mixture over the pastry.
  6. Continue layering the remaining filo pastry sheets, brushing each sheet with melted butter.
  7. Score the top of the pastry with a sharp knife.
  8. Bake for 45 minutes or until golden brown.
  9. Allow to cool slightly before slicing and serving.
