Pumpkin Pastry with Walnuts, also known as Tikvenik with Walnuts, is a traditional Bulgarian brunch dish that combines the sweetness of pumpkin with the crunchiness of walnuts, all wrapped in flaky pastry.
Ingredients
- 1 kg pumpkin, grated
- 200g walnuts, chopped
- 500g filo pastry sheets
- 200g sugar
- 100g butter, melted
- 1 tsp cinnamon
- 1/2 tsp salt
Instructions
- Preheat the oven to 180°C (350°F).
- In a large bowl, mix the grated pumpkin, chopped walnuts, sugar, cinnamon, and salt.
- Brush a baking dish with melted butter.
- Layer the filo pastry sheets, brushing each sheet with melted butter.
- Spread the pumpkin and walnut mixture over the pastry.
- Continue layering the remaining filo pastry sheets, brushing each sheet with melted butter.
- Score the top of the pastry with a sharp knife.
- Bake for 45 minutes or until golden brown.
- Allow to cool slightly before slicing and serving.
