ТӀухам (Pumpkin Pilaf) is a traditional dish from Chechen cuisine that combines the earthy sweetness of pumpkin with fragrant rice and savory spices. This hearty and flavorful pilaf is perfect for a cozy family dinner or a festive gathering.
Ingredients
- 2 cups basmati rice
- 2 cups diced pumpkin
- 1 onion, finely chopped
- 3 cloves garlic, minced
- 1 teaspoon cumin
- 1 teaspoon coriander
- 1/2 teaspoon turmeric
- 4 cups vegetable broth
- Salt and pepper to taste
- 2 tablespoons vegetable oil
Instructions
- Heat the vegetable oil in a large pot over medium heat.
- Add the chopped onion and minced garlic, and sauté until the onion is translucent.
- Add the diced pumpkin, cumin, coriander, and turmeric. Sauté for 5 minutes.
- Stir in the basmati rice and vegetable broth. Season with salt and pepper.
- Bring the mixture to a boil, then reduce the heat to low, cover, and simmer for 20-25 minutes, or until the rice is cooked and the liquid is absorbed.
- Fluff the pilaf with a fork before serving.
