Ingredients
- 2 lbs pumpkin, peeled and cubed
- 1 onion, chopped
- 3 tomatoes, chopped
- 2 cups spinach, chopped
- 1/2 cup ground peanuts
- 1 tsp ground ginger
- 1 tsp ground nutmeg
- 1/2 tsp cayenne pepper
- 6 cups vegetable broth
- Salt to taste
- 2 tbsp oil
Instructions
- In a large pot, heat the oil over medium heat.
- Add the chopped onions and sauté until translucent.
- Add the pumpkin, tomatoes, and spinach to the pot. Cook for 5 minutes, stirring occasionally.
- Pour in the vegetable broth and bring to a boil.
- Reduce the heat and let the soup simmer for 20 minutes, or until the pumpkin is tender.
- Stir in the ground peanuts, ginger, nutmeg, cayenne pepper, and salt. Simmer for an additional 10 minutes.
- Remove the pot from the heat and let the soup cool slightly.
- Using an immersion blender, purée the soup until smooth.
- Return the pot to the stove and reheat the soup over low heat.
- Adjust the seasoning if needed and serve hot.
