Ingredients

  • 2 lbs pumpkin, peeled and cubed

  • 3 tomatoes, chopped
  • 2 cups spinach, chopped
  • 1/2 cup ground peanuts
  • 1 tsp ground ginger
  • 1 tsp ground nutmeg
  • 1/2 tsp cayenne pepper
  • 6 cups vegetable broth
  • Salt to taste
  • 2 tbsp oil

Instructions

  1. In a large pot, heat the oil over medium heat.
  2. Add the chopped onions and sauté until translucent.
  3. Add the pumpkin, tomatoes, and spinach to the pot. Cook for 5 minutes, stirring occasionally.
  4. Pour in the vegetable broth and bring to a boil.
  5. Reduce the heat and let the soup simmer for 20 minutes, or until the pumpkin is tender.
