Pumpkin Soup (Sopa de Abóbora)
Sopa de Abóbora, or Pumpkin Soup, is a popular dish in Guinea-Bissauan cuisine, known for its rich and comforting flavors. This hearty soup is perfect for cooler weather and is a great way to enjoy the natural sweetness of pumpkins.
Ingredients
- 1 small pumpkin, peeled and diced
- 1 onion, chopped
- 2 cloves of garlic, minced
- 1 potato, peeled and diced
- 4 cups vegetable broth
- 1 teaspoon ground cumin
- 1/2 teaspoon ground nutmeg
- Salt and pepper to taste
- 2 tablespoons olive oil
Instructions
- In a large pot, heat the olive oil over medium heat. Add the chopped onion and minced garlic, and sauté until the onion is translucent.
- Add the diced pumpkin and potato to the pot, and stir to combine with the onion and garlic.
- Pour in the vegetable broth and season with ground cumin, ground nutmeg, salt, and pepper. Bring the mixture to a boil, then reduce the heat and let it simmer for 25-30 minutes, or until the pumpkin and potato are tender.
- Once the vegetables are cooked, use an immersion blender to puree the soup until smooth. If you don't have an immersion blender, you can carefully transfer the soup to a blender in batches and blend until smooth.
- Adjust the seasoning if needed, and serve the Sopa de Abóbora hot, garnished with a drizzle of olive oil and a sprinkle of ground nutmeg.
