Pumpkin Soup (Sopa de Abóbora)

Pumpkin Soup (Sopa de Abóbora)

Ingredients

  • 1 small pumpkin, peeled and diced
  • 1 onion, chopped
  • 2 cloves of garlic, minced
  • 1 potato, peeled and diced
  • 4 cups vegetable broth
  • 1 teaspoon ground cumin
  • 1/2 teaspoon ground nutmeg
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the chopped onion and minced garlic, and sauté until the onion is translucent.
  2. Add the diced pumpkin and potato to the pot, and stir to combine with the onion and garlic.
  3. Pour in the vegetable broth and season with ground cumin, ground nutmeg, salt, and pepper. Bring the mixture to a boil, then reduce the heat and let it simmer for 25-30 minutes, or until the pumpkin and potato are tender.
  4. Once the vegetables are cooked, use an immersion blender to puree the soup until smooth. If you don't have an immersion blender, you can carefully transfer the soup to a blender in batches and blend until smooth.
  5. Adjust the seasoning if needed, and serve the Sopa de Abóbora hot, garnished with a drizzle of olive oil and a sprinkle of ground nutmeg.
