Pumpkin Soup with Sage (Tekvicová polievka so šalviou)
This traditional Slovak pumpkin soup with sage is a comforting and flavorful dish perfect for the autumn season.
Ingredients
- 1 small pumpkin, peeled and cubed
- 1 onion, chopped
- 2 cloves garlic, minced
- 4 cups vegetable broth
- 1/4 cup heavy cream
- 2 tablespoons fresh sage, chopped
- Salt and pepper to taste
- 2 tablespoons olive oil
Instructions
- In a large pot, heat the olive oil over medium heat. Add the chopped onion and garlic, and cook until softened.
- Add the cubed pumpkin and chopped sage to the pot, and cook for 5 minutes, stirring occasionally.
- Pour in the vegetable broth and bring the mixture to a boil. Reduce the heat and let it simmer for 20 minutes, or until the pumpkin is tender.
- Using an immersion blender, puree the soup until smooth. Stir in the heavy cream and season with salt and pepper to taste.
- Serve the pumpkin soup hot, garnished with a drizzle of cream and a few sage leaves.
