Pumpkin Soup with Sage (Tekvicová polievka so šalviou)

Ingredients

  • 1 small pumpkin, peeled and cubed
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 4 cups vegetable broth
  • 1/4 cup heavy cream
  • 2 tablespoons fresh sage, chopped
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the chopped onion and garlic, and cook until softened.
  2. Add the cubed pumpkin and chopped sage to the pot, and cook for 5 minutes, stirring occasionally.
  3. Pour in the vegetable broth and bring the mixture to a boil. Reduce the heat and let it simmer for 20 minutes, or until the pumpkin is tender.
  4. Using an immersion blender, puree the soup until smooth. Stir in the heavy cream and season with salt and pepper to taste.
  5. Serve the pumpkin soup hot, garnished with a drizzle of cream and a few sage leaves.
