Punjabi Kadhi Pakora
Punjabi Kadhi Pakora is a popular North Indian dish consisting of deep-fried gram flour (besan) fritters in a tangy yogurt-based curry. It is a comforting and flavorful dish that is often served with steamed rice or naan.
Ingredients
- 1 cup gram flour (besan)
- 1 cup yogurt
- 2 cups water
- 1 onion, finely chopped
- 1 green chili, chopped
- 1/2 inch ginger, grated
- 1/2 teaspoon turmeric powder
- 1 teaspoon red chili powder
- 1 teaspoon cumin seeds
- 1/2 teaspoon fenugreek seeds
- 1/4 teaspoon asafoetida (hing)
- 1 tablespoon vegetable oil
- Salt to taste
- Fresh coriander leaves for garnish
Instructions
- In a bowl, mix gram flour, yogurt, and water to make a smooth batter. Set aside.
- Heat oil in a large pot. Add cumin seeds, fenugreek seeds, and asafoetida. Sauté until the seeds crackle.
- Add chopped onion, green chili, and grated ginger. Cook until the onions are translucent.
- Pour the gram flour and yogurt batter into the pot. Add turmeric powder, red chili powder, and salt. Stir well.
- Let the kadhi simmer on low heat for 20-25 minutes, stirring occasionally.
- Meanwhile, prepare the pakoras by dropping spoonfuls of the gram flour batter into hot oil and frying until golden brown.
- Add the fried pakoras to the simmering kadhi and cook for an additional 5 minutes.
- Garnish with fresh coriander leaves and serve hot with steamed rice or naan.
