Punjabi Kadhi Pakora

Ingredients

  • 1 cup gram flour (besan)
  • 1 cup yogurt
  • 2 cups water
  • 1 onion, finely chopped
  • 1 green chili, chopped
  • 1/2 inch ginger, grated
  • 1/2 teaspoon turmeric powder
  • 1 teaspoon red chili powder
  • 1 teaspoon cumin seeds
  • 1/2 teaspoon fenugreek seeds
  • 1/4 teaspoon asafoetida (hing)
  • 1 tablespoon vegetable oil
  • Salt to taste
  • Fresh coriander leaves for garnish

Instructions

  1. In a bowl, mix gram flour, yogurt, and water to make a smooth batter. Set aside.
  2. Heat oil in a large pot. Add cumin seeds, fenugreek seeds, and asafoetida. Sauté until the seeds crackle.
  3. Add chopped onion, green chili, and grated ginger. Cook until the onions are translucent.
  4. Pour the gram flour and yogurt batter into the pot. Add turmeric powder, red chili powder, and salt. Stir well.
  5. Let the kadhi simmer on low heat for 20-25 minutes, stirring occasionally.
  6. Meanwhile, prepare the pakoras by dropping spoonfuls of the gram flour batter into hot oil and frying until golden brown.
  7. Add the fried pakoras to the simmering kadhi and cook for an additional 5 minutes.
  8. Garnish with fresh coriander leaves and serve hot with steamed rice or naan.
