Punjabi Samosa (Deep-fried Savory Pastry)

Ingredients

  • 2 cups all-purpose flour
  • 1/4 cup vegetable oil
  • 1 teaspoon cumin seeds
  • 1 large potato, boiled and diced
  • 1/2 cup green peas
  • 1 teaspoon ginger, minced
  • 1 teaspoon garam masala
  • 1 teaspoon coriander powder
  • 1 teaspoon chili powder
  • Salt to taste
  • Oil for deep-frying

Instructions

  1. In a bowl, mix the flour and 1/4 cup oil. Add water gradually and knead into a firm dough. Cover and let it rest for 30 minutes.
  2. Heat 2 tablespoons of oil in a pan. Add cumin seeds and let them splutter.
  3. Add the diced potatoes, green peas, ginger, garam masala, coriander powder, chili powder, and salt. Cook for 5-7 minutes, then let the filling cool.
  4. Divide the dough into 6 equal portions and roll each into a circle. Cut each circle in half to form semi-circles.
  5. Take one semi-circle, form a cone, and fill it with the potato mixture. Seal the edges using water.
  6. Heat oil in a deep pan and deep-fry the samosas until golden brown and crispy.
  7. Remove and drain on paper towels. Serve hot with chutney or sauce.
