Punjene Paprike (montenegrin Style Stuffed Bell Peppers)

Ingredients

  • 4 large bell peppers
  • 1 cup cooked rice
  • 1 lb ground beef
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 can (14 oz) diced tomatoes
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 1/2 cup grated cheese
  • Fresh parsley for garnish

Instructions

  1. Cut the tops off the bell peppers and remove the seeds and membranes.
  2. In a large bowl, mix the cooked rice, ground beef, chopped onion, minced garlic, diced tomatoes, paprika, salt, and pepper.
  3. Stuff the bell peppers with the rice and meat mixture.
  4. Place the stuffed peppers in a pot and pour water over them until they are halfway submerged.
  5. Cover the pot and simmer for 1 hour, or until the peppers are tender.
  6. Sprinkle the grated cheese over the peppers and cook for an additional 5 minutes, until the cheese is melted.
  7. Garnish with fresh parsley before serving.
