Ingredients
- 4 medium zucchinis
- 1/2 lb ground beef
- 1/2 cup uncooked rice
- 1 onion, finely chopped
- 2 garlic cloves, minced
- 1 teaspoon paprika
- 1 teaspoon dried oregano
- Salt and pepper to taste
- 2 cups tomato sauce
- 1/2 cup grated cheese (optional)
Instructions
- Preheat the oven to 375°F (190°C).
- Cut the zucchinis in half lengthwise and scoop out the flesh, leaving about 1/4 inch shell. Chop the scooped zucchini flesh and set aside.
- In a skillet, brown the ground beef over medium heat. Add the chopped onion, garlic, and chopped zucchini flesh. Cook until the vegetables are tender.
- Stir in the uncooked rice, paprika, oregano, salt, and pepper. Cook for 2-3 minutes.
- Fill the zucchini shells with the meat and rice mixture. Place the stuffed zucchinis in a baking dish and pour the tomato sauce over them.
- Cover the dish with foil and bake for 30 minutes. Remove the foil, sprinkle the grated cheese on top (if using), and bake for an additional 10 minutes until the zucchinis are tender and the cheese is melted and bubbly.
