Ingredients

  • 2 cups whole wheat flour
  • 1/2 teaspoon salt
  • 1 tablespoon ghee (clarified butter)
  • 3/4 cup warm water
  • Oil for deep-frying

Instructions

  1. In a large mixing bowl, combine the whole wheat flour and salt.
  2. Add the ghee and mix it into the flour using your fingers until it resembles breadcrumbs.
  3. Slowly add the warm water and knead the dough until it is smooth and elastic. Cover the dough and let it rest for 15 minutes.
  4. Divide the dough into small balls and roll each ball into a circle about 4 inches in diameter.
  5. Heat the oil in a deep pan over medium heat. Once the oil is hot, carefully slide in a puri and gently press it with a slotted spoon. This will help the puri to puff up. Fry until golden brown on both sides.
  6. Remove the puri from the oil and place it on a paper towel to drain any excess oil. Repeat with the remaining dough balls.
