Ingredients

  • 1 1/2 cups all-purpose flour
  • 1/2 cup unsalted butter, cold and cubed

  • 1/4 teaspoon salt
  • 1/4 cup ice water
  • 2 cups mashed purple yam
  • 1/2 cup coconut milk
  • 1/2 cup brown sugar
  • 1 teaspoon vanilla extract

Instructions

  1. In a food processor, pulse together the flour, sugar, and salt. Add the cold butter and pulse until the mixture resembles coarse crumbs.
  2. Gradually add the ice water and pulse until the dough comes together. Shape the dough into a disk, wrap in plastic wrap, and refrigerate for 30 minutes.
  3. Preheat the oven to 375°F (190°C).
  4. Roll out the chilled dough on a floured surface and press it into a tart pan. Trim off any excess dough.
  5. In a bowl, mix together the mashed purple yam, coconut milk, brown sugar, and vanilla extract until smooth. Pour the mixture into the tart crust.
