Ingredients
- 1 1/2 cups all-purpose flour
- 1/2 cup unsalted butter, cold and cubed
- 1/4 cup granulated sugar
- 1/4 teaspoon salt
- 1/4 cup ice water
- 2 cups mashed purple yam
- 1/2 cup coconut milk
- 1/2 cup brown sugar
- 1 teaspoon vanilla extract
Instructions
- In a food processor, pulse together the flour, sugar, and salt. Add the cold butter and pulse until the mixture resembles coarse crumbs.
- Gradually add the ice water and pulse until the dough comes together. Shape the dough into a disk, wrap in plastic wrap, and refrigerate for 30 minutes.
- Preheat the oven to 375°F (190°C).
- Roll out the chilled dough on a floured surface and press it into a tart pan. Trim off any excess dough.
- In a bowl, mix together the mashed purple yam, coconut milk, brown sugar, and vanilla extract until smooth. Pour the mixture into the tart crust.
- Bake for 45 minutes, or until the filling is set and the crust is golden brown. Allow the tart to cool before serving.
