Ingredients
- 1 whole duck, cleaned and cut into pieces
- 1 onion, thinly sliced
- 3 cloves garlic, minced
- 1 thumb-sized ginger, julienned
- 3 green onions, chopped
- 1/2 cup soy sauce
- 1/4 cup rice wine
- 3 tbsp sugar
- 2 cups water
- Salt and pepper to taste
Instructions
- Season the duck pieces with salt and pepper.
- In a large pot, arrange the duck pieces in a single layer and sear them over medium heat until golden brown. Remove and set aside.
- In the same pot, sauté the onion, garlic, ginger, and green onions until fragrant.
- Add the soy sauce, rice wine, sugar, and water to the pot. Stir to combine.
- Return the duck pieces to the pot, cover, and simmer over low heat for 1.5 to 2 hours, or until the duck is tender and the sauce has thickened.
- Adjust the seasoning with salt and pepper if needed.
- Serve the Pyongyang-style braised duck hot with steamed rice.
