Ingredients

  • 1 whole duck, cleaned and cut into pieces
  • 1 onion, thinly sliced
  • 3 cloves garlic, minced

  • 3 green onions, chopped
  • 1/2 cup soy sauce
  • 1/4 cup rice wine
  • 3 tbsp sugar
  • 2 cups water

Instructions

  1. Season the duck pieces with salt and pepper.
  2. In a large pot, arrange the duck pieces in a single layer and sear them over medium heat until golden brown. Remove and set aside.
  3. In the same pot, sauté the onion, garlic, ginger, and green onions until fragrant.
  4. Add the soy sauce, rice wine, sugar, and water to the pot. Stir to combine.
  5. Return the duck pieces to the pot, cover, and simmer over low heat for 1.5 to 2 hours, or until the duck is tender and the sauce has thickened.
  6. Adjust the seasoning with salt and pepper if needed.
  7. Serve the Pyongyang-style braised duck hot with steamed rice.
