Pyongyang-style Braised Pork Belly (평양식 돼지고기 불고기)

Ingredients

  • 1.5 lbs pork belly, sliced
  • 1 onion, thinly sliced
  • 3 cloves garlic, minced
  • 1/4 cup soy sauce
  • 2 tbsp sugar
  • 1 tbsp rice wine
  • 1/2 tsp black pepper
  • 1 cup water

Instructions

  1. In a large pot, arrange the pork belly slices in a single layer.
  2. Add the sliced onion and minced garlic on top of the pork belly.
  3. In a small bowl, mix together the soy sauce, sugar, rice wine, and black pepper. Pour this mixture over the pork belly, onion, and garlic.
  4. Add water to the pot, ensuring the pork belly is mostly submerged.
  5. Cover the pot and bring the liquid to a boil over medium heat. Once boiling, reduce the heat to low and simmer for 1.5 hours, or until the pork belly is tender.
  6. Uncover the pot and increase the heat to medium-high. Cook for an additional 20-30 minutes, or until the liquid has reduced and thickened into a glaze.
  7. Serve the braised pork belly hot with steamed rice and kimchi.
