Ingredients
- 200g sweet potato glass noodles
- 1/2 cup soy sauce
- 3 tbsp sugar
- 2 tbsp sesame oil
- 1 tbsp vegetable oil
- 1 onion, thinly sliced
- 2 cloves garlic, minced
- 1 carrot, julienned
- 1 red bell pepper, julienned
- 4-5 shiitake mushrooms, sliced
- 1 cup spinach
- 1/2 cup thinly sliced beef (optional)
- Sesame seeds for garnish
Instructions
- Boil the sweet potato glass noodles according to package instructions, then drain and rinse with cold water. Set aside.
- In a small bowl, mix soy sauce, sugar, and sesame oil to make the sauce. Set aside.
- Heat vegetable oil in a large pan over medium heat. Add the onion and garlic, and sauté until fragrant.
- Add the carrot, bell pepper, mushrooms, and spinach to the pan. Stir-fry until the vegetables are tender.
- If using beef, add it to the pan and cook until it's no longer pink.
- Add the cooked noodles and the sauce to the pan. Toss everything together until well combined and heated through.
- Transfer the Japchae to a serving dish and garnish with sesame seeds.
