Ingredients

  • 200g sweet potato glass noodles
  • 1/2 cup soy sauce
  • 3 tbsp sugar
  • 2 tbsp sesame oil
  • 1 tbsp vegetable oil
  • 1 onion, thinly sliced
  • 2 cloves garlic, minced
  • 1 carrot, julienned
  • 1 red bell pepper, julienned
  • 4-5 shiitake mushrooms, sliced
  • 1 cup spinach
  • 1/2 cup thinly sliced beef (optional)
  • Sesame seeds for garnish

Instructions

  1. Boil the sweet potato glass noodles according to package instructions, then drain and rinse with cold water. Set aside.
  2. In a small bowl, mix soy sauce, sugar, and sesame oil to make the sauce. Set aside.
  3. Heat vegetable oil in a large pan over medium heat. Add the onion and garlic, and sauté until fragrant.
  4. Add the carrot, bell pepper, mushrooms, and spinach to the pan. Stir-fry until the vegetables are tender.
  5. If using beef, add it to the pan and cook until it's no longer pink.
  6. Add the cooked noodles and the sauce to the pan. Toss everything together until well combined and heated through.
  7. Transfer the Japchae to a serving dish and garnish with sesame seeds.
