Ingredients

  • 2 cups of well-fermented kimchi
  • 1/2 pound of pork belly, thinly sliced
  • 1 block of firm tofu, cut into cubes
  • 1 onion, sliced
  • 3 cloves of garlic, minced
  • 4 cups of water
  • 2 tablespoons of Korean red pepper flakes (gochugaru)
  • 2 tablespoons of soy sauce
  • 1 tablespoon of sesame oil
  • 1 tablespoon of vegetable oil
  • Salt to taste

Instructions

  1. In a large pot, heat the vegetable oil over medium heat. Add the pork belly and cook until browned.
  2. Add the sliced onion and minced garlic, and sauté until fragrant.
  3. Add the well-fermented kimchi and cook for 5 minutes.
  4. Pour in the water and bring the stew to a boil.
  5. Add the Korean red pepper flakes, soy sauce, and tofu. Simmer for 15 minutes.
  6. Season with salt and sesame oil, then serve hot.
