평양식 김치찌개 (Pyongyang-style Kimchi Jjigae) is a traditional North Korean stew made with kimchi, tofu, and pork. It is a popular comfort food in North Korean cuisine, known for its spicy and savory flavors.
Ingredients
- 2 cups of well-fermented kimchi
- 1/2 pound of pork belly, thinly sliced
- 1 block of firm tofu, cut into cubes
- 1 onion, sliced
- 3 cloves of garlic, minced
- 4 cups of water
- 2 tablespoons of Korean red pepper flakes (gochugaru)
- 2 tablespoons of soy sauce
- 1 tablespoon of sesame oil
- 1 tablespoon of vegetable oil
- Salt to taste
Instructions
- In a large pot, heat the vegetable oil over medium heat. Add the pork belly and cook until browned.
- Add the sliced onion and minced garlic, and sauté until fragrant.
- Add the well-fermented kimchi and cook for 5 minutes.
- Pour in the water and bring the stew to a boil.
- Add the Korean red pepper flakes, soy sauce, and tofu. Simmer for 15 minutes.
- Season with salt and sesame oil, then serve hot.
