Ingredients
- 1 whole chicken, about 3-4 pounds
- 8 cloves garlic
- 8 dried jujubes (Korean dates)
- 1 cup sweet rice (glutinous rice)
- 8 ginseng roots
- Salt and pepper to taste
- 8 cups water
Instructions
- Wash the sweet rice and soak it in water for 1 hour.
- Clean the chicken and remove any excess fat. Season the cavity with salt and pepper.
- Stuff the cavity of the chicken with the soaked sweet rice, garlic, jujubes, and ginseng roots.
- Sew the cavity closed with kitchen twine or use toothpicks to secure the opening.
- In a large pot, add the stuffed chicken and pour in the water.
- Bring the pot to a boil, then reduce the heat and simmer for 1 hour, or until the chicken is fully cooked.
- Remove the chicken from the pot and let it rest for a few minutes before slicing it into serving pieces.
- Season the broth with salt and pepper to taste.
- Serve the Pyongyang-style Samgyetang hot, with the broth and chicken pieces in individual bowls.
