Ingredients
- 500g mixed seafood (shrimp, squid, mussels)
- 200g firm tofu, cut into cubes
- 1 onion, sliced
- 1 zucchini, sliced
- 4-5 shiitake mushrooms, sliced
- 4 cups seafood or chicken broth
- 2 tbsp soy sauce
- 2 tbsp gochugaru (Korean red pepper flakes)
- 2 cloves garlic, minced
- 1 tsp sesame oil
- 1 green onion, chopped
- 1 pack instant ramen noodles
- Salt and pepper to taste
Instructions
- In a large pot, bring the seafood or chicken broth to a simmer over medium heat.
- Add the sliced onion, zucchini, and shiitake mushrooms to the pot and let them cook for 5 minutes.
- Stir in the soy sauce, gochugaru, and minced garlic, then add the mixed seafood and tofu to the pot.
- Cover the pot and let the hot pot simmer for 15-20 minutes, or until the seafood is fully cooked.
- While the hot pot is simmering, cook the instant ramen noodles according to the package instructions and set aside.
- Season the hot pot with salt, pepper, and sesame oil to taste.
- Divide the cooked noodles into serving bowls and ladle the hot pot over the noodles.
- Garnish with chopped green onions and serve hot.
