Pyongyang-style Seafood Hot Pot (평양식 해물전골)

Ingredients

  • 500g mixed seafood (shrimp, squid, mussels)
  • 200g firm tofu, cut into cubes
  • 1 onion, sliced
  • 1 zucchini, sliced
  • 4-5 shiitake mushrooms, sliced
  • 4 cups seafood or chicken broth
  • 2 tbsp soy sauce
  • 2 tbsp gochugaru (Korean red pepper flakes)
  • 2 cloves garlic, minced
  • 1 tsp sesame oil
  • 1 green onion, chopped
  • 1 pack instant ramen noodles
  • Salt and pepper to taste

Instructions

  1. In a large pot, bring the seafood or chicken broth to a simmer over medium heat.
  2. Add the sliced onion, zucchini, and shiitake mushrooms to the pot and let them cook for 5 minutes.
  3. Stir in the soy sauce, gochugaru, and minced garlic, then add the mixed seafood and tofu to the pot.
  4. Cover the pot and let the hot pot simmer for 15-20 minutes, or until the seafood is fully cooked.
  5. While the hot pot is simmering, cook the instant ramen noodles according to the package instructions and set aside.
  6. Season the hot pot with salt, pepper, and sesame oil to taste.
  7. Divide the cooked noodles into serving bowls and ladle the hot pot over the noodles.
  8. Garnish with chopped green onions and serve hot.
