Qabuli Korma (hazaragi Spiced Lamb And Rice Pilaf)

Ingredients
- 1 lb lamb, cubed
- 2 cups basmati rice
- 1 onion, finely chopped
- 3 cloves garlic, minced
- 1 tsp ground turmeric
- 1 tsp ground coriander
- 1 tsp ground cumin
- 1/2 tsp ground cinnamon
- 1/4 tsp ground cardamom
- 1/4 cup raisins
- 1/4 cup slivered almonds
- 4 cups chicken broth
- Salt and pepper to taste
- 2 tbsp vegetable oil
Instructions
- Heat the vegetable oil in a large pot over medium heat. Add the chopped onion and cook until softened.
- Add the cubed lamb to the pot and cook until browned on all sides.
- Stir in the minced garlic, turmeric, coriander, cumin, cinnamon, and cardamom. Cook for 2 minutes until fragrant.
- Add the basmati rice, raisins, and slivered almonds to the pot. Stir to combine with the lamb and spices.
- Pour in the chicken broth and season with salt and pepper. Bring to a boil, then reduce the heat to low, cover, and simmer for 20-25 minutes until the rice is cooked and the liquid is absorbed.
- Fluff the rice pilaf with a fork and serve hot.
