Ingredients

  • 1 lb lamb, cubed
  • 2 cups basmati rice
  • 1 onion, finely chopped
  • 3 cloves garlic, minced
  • 1 tsp ground turmeric
  • 1 tsp ground coriander
  • 1 tsp ground cumin
  • 1/2 tsp ground cinnamon
  • 1/4 tsp ground cardamom
  • 1/4 cup raisins
  • 1/4 cup slivered almonds
  • 4 cups chicken broth
  • Salt and pepper to taste
  • 2 tbsp vegetable oil

Instructions

  1. Heat the vegetable oil in a large pot over medium heat. Add the chopped onion and cook until softened.
  2. Add the cubed lamb to the pot and cook until browned on all sides.
  3. Stir in the minced garlic, turmeric, coriander, cumin, cinnamon, and cardamom. Cook for 2 minutes until fragrant.
  4. Add the basmati rice, raisins, and slivered almonds to the pot. Stir to combine with the lamb and spices.
  5. Pour in the chicken broth and season with salt and pepper. Bring to a boil, then reduce the heat to low, cover, and simmer for 20-25 minutes until the rice is cooked and the liquid is absorbed.
  6. Fluff the rice pilaf with a fork and serve hot.
