Qabuli Pulao (hazaragi Spiced Beef And Rice Pilaf)

Ingredients

  • 2 cups basmati rice, rinsed and soaked for 30 minutes
  • 1 pound beef, cubed
  • 1 large onion, finely chopped
  • 1/2 cup raisins
  • 1/4 cup slivered almonds
  • 4 carrots, julienned
  • 1/4 cup cooking oil
  • 1 teaspoon ground turmeric
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground cardamom
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat the cooking oil over medium heat. Add the chopped onion and cook until golden brown.
  2. Add the cubed beef to the pot and cook until browned on all sides.
  3. Stir in the ground turmeric, cinnamon, and cardamom, and season with salt and pepper.
  4. Add 4 cups of water to the pot and bring to a boil. Reduce the heat, cover, and simmer for 30 minutes.
  5. In a separate pot, bring 6 cups of water to a boil. Add the soaked rice and cook for 5 minutes. Drain the rice and set aside.
  6. Preheat the oven to 350°F (175°C).
  7. Layer the cooked beef, carrots, raisins, and almonds in a large baking dish. Top with the parboiled rice.
  8. Cover the baking dish with foil and bake for 30 minutes.
  9. Once the rice is cooked, fluff it with a fork and serve the Qabuli Pulao hot.
