Qabuli Pulao (hazaragi Spiced Beef And Rice Pilaf)
Qabuli Pulao is a traditional Hazaragi dish that features spiced beef and aromatic rice pilaf. This flavorful and hearty dish is a staple in Hazaragi cuisine and is perfect for special occasions and gatherings.
Ingredients
- 2 cups basmati rice, rinsed and soaked for 30 minutes
- 1 pound beef, cubed
- 1 large onion, finely chopped
- 1/2 cup raisins
- 1/4 cup slivered almonds
- 4 carrots, julienned
- 1/4 cup cooking oil
- 1 teaspoon ground turmeric
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground cardamom
- Salt and pepper to taste
Instructions
- In a large pot, heat the cooking oil over medium heat. Add the chopped onion and cook until golden brown.
- Add the cubed beef to the pot and cook until browned on all sides.
- Stir in the ground turmeric, cinnamon, and cardamom, and season with salt and pepper.
- Add 4 cups of water to the pot and bring to a boil. Reduce the heat, cover, and simmer for 30 minutes.
- In a separate pot, bring 6 cups of water to a boil. Add the soaked rice and cook for 5 minutes. Drain the rice and set aside.
- Preheat the oven to 350°F (175°C).
- Layer the cooked beef, carrots, raisins, and almonds in a large baking dish. Top with the parboiled rice.
- Cover the baking dish with foil and bake for 30 minutes.
- Once the rice is cooked, fluff it with a fork and serve the Qabuli Pulao hot.
