Ingredients

  • 2 lbs fresh Arctic clams, scrubbed
  • 4 slices bacon, chopped
  • 1 onion, diced
  • 2 celery stalks, chopped
  • 2 carrots, diced
  • 3 potatoes, peeled and cubed
  • 4 cups fish or vegetable broth
  • 1 cup heavy cream
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. In a large pot, cook the chopped bacon over medium heat until crispy. Remove the bacon from the pot and set aside, leaving the bacon fat in the pot.
  2. Add the diced onion, chopped celery, and diced carrots to the pot. Sauté until the vegetables are tender.
  3. Add the cubed potatoes and fish or vegetable broth to the pot. Bring to a boil, then reduce the heat and simmer until the potatoes are cooked through.
  4. Add the fresh Arctic clams to the pot and cook for a few minutes until they open. Discard any clams that do not open.
  5. Stir in the heavy cream and season the chowder with salt and pepper to taste.
  6. Simmer the chowder for a few more minutes to allow the flavors to meld together.
  7. Serve the Qalgiq Aqpiq hot, garnished with crispy bacon and fresh parsley.
