Qalgiq Aqpiq (arctic Clam Chowder)

Ingredients
- 2 lbs fresh Arctic clams, scrubbed
- 4 slices bacon, chopped
- 1 onion, diced
- 2 celery stalks, chopped
- 2 carrots, diced
- 3 potatoes, peeled and cubed
- 4 cups fish or vegetable broth
- 1 cup heavy cream
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- In a large pot, cook the chopped bacon over medium heat until crispy. Remove the bacon from the pot and set aside, leaving the bacon fat in the pot.
- Add the diced onion, chopped celery, and diced carrots to the pot. Sauté until the vegetables are tender.
- Add the cubed potatoes and fish or vegetable broth to the pot. Bring to a boil, then reduce the heat and simmer until the potatoes are cooked through.
- Add the fresh Arctic clams to the pot and cook for a few minutes until they open. Discard any clams that do not open.
- Stir in the heavy cream and season the chowder with salt and pepper to taste.
- Simmer the chowder for a few more minutes to allow the flavors to meld together.
- Serve the Qalgiq Aqpiq hot, garnished with crispy bacon and fresh parsley.
