Qalgiq Hare Stew (arctic Hare Stew)

Ingredients

  • 2 lbs Arctic hare, cut into pieces
  • 3 tbsp vegetable oil
  • 1 onion, chopped
  • 3 carrots, sliced
  • 3 potatoes, diced
  • 4 cups chicken or vegetable broth
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 2 bay leaves

Instructions

  1. Heat the vegetable oil in a large pot over medium heat.
  2. Add the chopped onion and cook until translucent.
  3. Add the pieces of Arctic hare to the pot and brown on all sides.
  4. Pour in the chicken or vegetable broth and bring to a boil.
  5. Add the sliced carrots, diced potatoes, salt, black pepper, and bay leaves to the pot.
  6. Reduce the heat to low, cover the pot, and let the stew simmer for 2 hours, or until the hare is tender.
  7. Remove the bay leaves before serving.
