Qalgiq Hare Stew, also known as Arctic Hare Stew, is a traditional dish from Chukchi Cuisine that is hearty, flavorful, and perfect for warming up during the cold Arctic winters.
Ingredients
- 2 lbs Arctic hare, cut into pieces
- 3 tbsp vegetable oil
- 1 onion, chopped
- 3 carrots, sliced
- 3 potatoes, diced
- 4 cups chicken or vegetable broth
- 1 tsp salt
- 1/2 tsp black pepper
- 2 bay leaves
Instructions
- Heat the vegetable oil in a large pot over medium heat.
- Add the chopped onion and cook until translucent.
- Add the pieces of Arctic hare to the pot and brown on all sides.
- Pour in the chicken or vegetable broth and bring to a boil.
- Add the sliced carrots, diced potatoes, salt, black pepper, and bay leaves to the pot.
- Reduce the heat to low, cover the pot, and let the stew simmer for 2 hours, or until the hare is tender.
- Remove the bay leaves before serving.
