Qalgiq Salmon Salad (arctic Salmon Salad)

Ingredients

  • 1 lb Arctic salmon fillet, cooked and flaked
  • 2 cups mixed salad greens
  • 1 cucumber, sliced
  • 1/2 red onion, thinly sliced
  • 1/4 cup cherry tomatoes, halved
  • 1/4 cup Kalamata olives
  • 1/4 cup feta cheese, crumbled
  • 2 tablespoons extra virgin olive oil
  • 2 tablespoons lemon juice
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine the mixed salad greens, cucumber, red onion, cherry tomatoes, and Kalamata olives.
  2. Add the flaked Arctic salmon and crumbled feta cheese to the bowl.
  3. In a small bowl, whisk together the extra virgin olive oil, lemon juice, salt, and pepper to make the dressing.
  4. Pour the dressing over the salad and toss gently to coat all the ingredients.
  5. Divide the salad into serving plates and serve immediately.
