Ingredients

  • 1 lb bison meat, thinly sliced
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tsp ground coriander
  • 1 tsp ground cumin
  • 1/2 tsp smoked paprika
  • Salt and pepper to taste
  • 8 small flour tortillas
  • 1 cup shredded cabbage
  • 1/2 cup crumbled feta cheese
  • 1/4 cup chopped fresh cilantro
  • Lime wedges for serving

Instructions

  1. In a large skillet, heat some oil over medium-high heat. Add the bison meat and cook until browned, about 5-7 minutes.
  2. Add the chopped onion and garlic to the skillet and cook until softened, about 3 minutes.
  3. Stir in the ground coriander, cumin, smoked paprika, salt, and pepper. Cook for another 2-3 minutes to let the flavors meld.
  4. Warm the flour tortillas in a separate skillet or in the oven.
  5. Assemble the tacos by placing a portion of the bison mixture onto each tortilla. Top with shredded cabbage, crumbled feta cheese, and chopped cilantro.
