Qatayef (date And Cardamom Pancakes)
Qatayef is a popular dessert in Bahrain, especially during the holy month of Ramadan. These delicious pancakes are filled with a sweet mixture of dates and cardamom, then fried to perfection. They are a delightful treat for special occasions or as a sweet ending to a meal.
Ingredients
- 1 cup all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon instant yeast
- 1 tablespoon sugar
- 1 cup water
- 1 cup pitted dates, chopped
- 1/2 teaspoon ground cardamom
- 1 tablespoon vegetable oil
- 1/4 cup chopped nuts (optional)
- Vegetable oil for frying
Instructions
- In a bowl, mix the flour, baking powder, yeast, sugar, and water to make a smooth batter. Let it rest for 10 minutes.
- In another bowl, combine the chopped dates, cardamom, and nuts (if using).
- Heat a non-stick pan over medium heat and lightly grease it with vegetable oil.
- Pour 1 tablespoon of the batter onto the pan to form a small pancake. Cook until bubbles form on the surface, then flip and cook for another minute. Repeat with the remaining batter.
- Place a spoonful of the date mixture in the center of each pancake, then fold it in half and pinch the edges to seal.
- Heat vegetable oil in a deep pan over medium heat. Fry the filled qatayef until golden brown on both sides.
- Remove from the oil and drain on paper towels.
- Serve the qatayef warm and enjoy!
