Ingredients

  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon instant yeast
  • 1 tablespoon sugar
  • 1 cup water
  • 1 cup pitted dates, chopped
  • 1/2 teaspoon ground cardamom
  • 1 tablespoon vegetable oil
  • 1/4 cup chopped nuts (optional)
  • Vegetable oil for frying

Instructions

  1. In a bowl, mix the flour, baking powder, yeast, sugar, and water to make a smooth batter. Let it rest for 10 minutes.
  2. In another bowl, combine the chopped dates, cardamom, and nuts (if using).
  3. Heat a non-stick pan over medium heat and lightly grease it with vegetable oil.
  4. Pour 1 tablespoon of the batter onto the pan to form a small pancake. Cook until bubbles form on the surface, then flip and cook for another minute. Repeat with the remaining batter.
  5. Place a spoonful of the date mixture in the center of each pancake, then fold it in half and pinch the edges to seal.
  6. Heat vegetable oil in a deep pan over medium heat. Fry the filled qatayef until golden brown on both sides.
  7. Remove from the oil and drain on paper towels.
  8. Serve the qatayef warm and enjoy!
