Ingredients

  • 1 tablespoon olive oil

  • 1 can (14.5 oz) diced tomatoes
  • 1 can (14.5 oz) black beans, drained and rinsed
  • 1 cup frozen corn
  • 1 cup cooked shredded chicken
  • Salt and pepper to taste
  • 1/4 cup chopped fresh cilantro
  • 1 avocado, diced
  • 1 lime, cut into wedges
  • 1/2 cup shredded cheese (optional)
  • Tortilla strips or chips, for serving

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the diced onion and cook until softened, about 5 minutes.
  2. Add the minced garlic, ground cumin, and chili powder to the pot. Cook for 1-2 minutes, until fragrant.
  3. Pour in the chicken or vegetable broth, diced tomatoes, black beans, frozen corn, and shredded chicken. Bring the soup to a simmer and let it cook for 15-20 minutes.
