Qdoba Tortilla Soup

- 1 avocado, diced
- 1 lime, cut into wedges
- 1/2 cup shredded cheese (optional)

Instructions
- In a large pot, heat the olive oil over medium heat. Add the diced onion and cook until softened, about 5 minutes.
- Add the minced garlic, ground cumin, and chili powder to the pot. Cook for 1-2 minutes, until fragrant.
- Pour in the chicken or vegetable broth, diced tomatoes, black beans, frozen corn, and shredded chicken. Bring the soup to a simmer and let it cook for 15-20 minutes.
- Season the soup with salt and pepper to taste. Stir in the chopped cilantro.
- To serve, ladle the soup into bowls and top with diced avocado, a squeeze of lime juice, shredded cheese (if using), and tortilla strips or chips.
