Ingredients
- 1 lb lamb, cubed
- 1 onion, finely chopped
- 3 garlic cloves, minced
- 1 can (15 oz) chickpeas, drained and rinsed
- 2 tomatoes, diced
- 2 tbsp tomato paste
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1/2 tsp turmeric
- 1/4 tsp cayenne pepper
- Salt and pepper to taste
- 2 cups chicken or vegetable broth
- 2 tbsp olive oil
- Fresh cilantro for garnish
Instructions
- Heat the olive oil in a large pot over medium heat. Add the chopped onion and cook until softened.
- Add the cubed lamb to the pot and cook until browned on all sides.
- Stir in the minced garlic, ground cumin, coriander, turmeric, and cayenne pepper. Cook for 1-2 minutes until fragrant.
- Add the diced tomatoes, tomato paste, and drained chickpeas to the pot. Stir to combine.
- Pour in the chicken or vegetable broth, season with salt and pepper, and bring the mixture to a simmer.
- Cover the pot and let the Qeema Bamia simmer for 45-50 minutes, or until the lamb is tender and the flavors have melded together.
- Adjust the seasoning if needed and serve the Qeema Bamia hot, garnished with fresh cilantro.
