Ingredients

  • 1 lb lamb, cubed
  • 1 onion, finely chopped
  • 3 garlic cloves, minced
  • 1 can (15 oz) chickpeas, drained and rinsed
  • 2 tomatoes, diced
  • 2 tbsp tomato paste
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1/2 tsp turmeric
  • 1/4 tsp cayenne pepper
  • Salt and pepper to taste
  • 2 cups chicken or vegetable broth
  • 2 tbsp olive oil
  • Fresh cilantro for garnish

Instructions

  1. Heat the olive oil in a large pot over medium heat. Add the chopped onion and cook until softened.
  2. Add the cubed lamb to the pot and cook until browned on all sides.
  3. Stir in the minced garlic, ground cumin, coriander, turmeric, and cayenne pepper. Cook for 1-2 minutes until fragrant.
  4. Add the diced tomatoes, tomato paste, and drained chickpeas to the pot. Stir to combine.
  5. Pour in the chicken or vegetable broth, season with salt and pepper, and bring the mixture to a simmer.
  6. Cover the pot and let the Qeema Bamia simmer for 45-50 minutes, or until the lamb is tender and the flavors have melded together.
