Ingredients
- 1 lb lamb, cubed
- 1 onion, finely chopped
- 3 garlic cloves, minced
- 1 can (15 oz) chickpeas, drained and rinsed
- 2 tomatoes, diced
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1/2 tsp turmeric
- 1/4 tsp cinnamon
- Salt and pepper to taste
- 2 cups chicken or beef broth
- 2 tbsp olive oil
- Fresh cilantro for garnish
Instructions
- In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté until it becomes translucent.
- Add the cubed lamb to the pot and cook until it's browned on all sides.
- Stir in the minced garlic, ground cumin, ground coriander, turmeric, and cinnamon. Cook for a few minutes until the spices become fragrant.
- Add the diced tomatoes, chickpeas, and broth to the pot. Season with salt and pepper, then bring the stew to a simmer.
- Cover the pot and let the stew cook for about 1 hour, or until the lamb is tender.
- Once the stew is ready, taste and adjust the seasoning if needed. Serve the Qeema Bamia hot, garnished with fresh cilantro.
