Ingredients
- 1 lb ground lamb
- 2 tablespoons olive oil
- 1 onion, finely chopped
- 3 garlic cloves, minced
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1/2 teaspoon turmeric
- 1/4 teaspoon cayenne pepper
- 1 can (14 oz) diced tomatoes
- 1/2 cup chicken or beef broth
- Salt and pepper to taste
- Chopped fresh cilantro for garnish
Instructions
- In a large skillet, heat the olive oil over medium heat. Add the chopped onion and cook until softened, about 5 minutes.
- Add the garlic, ground lamb, cumin, coriander, turmeric, and cayenne pepper. Cook, stirring frequently, until the lamb is browned and the spices are fragrant, about 8-10 minutes.
- Pour in the diced tomatoes and broth. Season with salt and pepper. Bring the mixture to a simmer, then reduce the heat to low and let it cook for 45 minutes, stirring occasionally.
- Once the curry has thickened and the flavors have melded, remove from heat. Garnish with chopped cilantro before serving.
