Qeema (iraqi Lamb Stew)

Ingredients

  • 1 lb ground lamb
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1/2 tsp turmeric
  • 1/2 tsp cinnamon
  • 1/4 tsp cayenne pepper
  • 1/4 cup tomato paste
  • 2 cups beef or lamb broth
  • Salt and pepper to taste
  • Chopped fresh cilantro for garnish

Instructions

  1. In a large pot, brown the ground lamb over medium heat.
  2. Add the chopped onion and garlic, and cook until the onion is soft.
  3. Stir in the ground cumin, coriander, turmeric, cinnamon, and cayenne pepper, and cook for 1-2 minutes until fragrant.
  4. Add the tomato paste and broth, and season with salt and pepper.
  5. Simmer the stew over low heat for 1.5-2 hours, stirring occasionally, until the flavors have melded and the stew has thickened.
  6. Adjust the seasoning if needed, and serve the Qeema hot, garnished with chopped cilantro.
