Qeme-qeme Grilled Zucchini And Corn Salad

Ingredients

  • 2 medium zucchinis, sliced lengthwise
  • 2 ears of corn, husked
  • 1 red onion, sliced into rounds
  • 1/4 cup olive oil
  • Salt and pepper to taste
  • 1/4 cup fresh cilantro, chopped
  • 1/4 cup feta cheese, crumbled

Instructions

  1. Preheat the grill to medium-high heat.
  2. Brush the zucchini, corn, and red onion with olive oil and season with salt and pepper.
  3. Grill the vegetables until they have grill marks and are tender, about 3-4 minutes per side for the zucchini and onion, and 10-12 minutes for the corn.
  4. Remove the vegetables from the grill and let them cool slightly.
  5. Cut the kernels off the corn and place them in a large bowl.
  6. Chop the grilled zucchini and red onion and add them to the bowl.
