Ingredients
- 2 medium zucchinis, sliced lengthwise
- 2 ears of corn, husked
- 1 red onion, sliced into rounds
- 1/4 cup olive oil
- Salt and pepper to taste
- 1/4 cup fresh cilantro, chopped
- 1/4 cup feta cheese, crumbled
Instructions
- Preheat the grill to medium-high heat.
- Brush the zucchini, corn, and red onion with olive oil and season with salt and pepper.
- Grill the vegetables until they have grill marks and are tender, about 3-4 minutes per side for the zucchini and onion, and 10-12 minutes for the corn.
- Remove the vegetables from the grill and let them cool slightly.
- Cut the kernels off the corn and place them in a large bowl.
