Qeme-qeme Vegetable Stir-fry

Ingredients

  • 2 tablespoons vegetable oil
  • 1 onion, sliced
  • 2 carrots, julienned
  • 1 red bell pepper, sliced
  • 1 cup snap peas
  • 1 cup broccoli florets
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 1 teaspoon grated ginger
  • 2 cloves garlic, minced
  • Salt and pepper to taste

Instructions

  1. Heat the vegetable oil in a large pan or wok over medium-high heat.
  2. Add the sliced onion and cook until translucent.
  3. Add the julienned carrots, sliced red bell pepper, snap peas, and broccoli florets to the pan. Stir-fry for 3-4 minutes until the vegetables are tender-crisp.
  4. In a small bowl, mix together the soy sauce, sesame oil, grated ginger, and minced garlic.
  5. Pour the sauce over the stir-fried vegetables and toss to coat evenly. Cook for an additional 1-2 minutes.
  6. Season with salt and pepper to taste.
  7. Remove from heat and serve the Qeme-Qeme Vegetable Stir-Fry hot.
