Qi-Boosting Quinoa Salad (气补藜麦沙拉)

Ingredients

  • 1 cup quinoa
  • 2 cups water
  • 1 cucumber, diced
  • 1 bell pepper, chopped
  • 1/2 red onion, finely sliced
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup olive oil
  • 2 tablespoons lemon juice

Instructions
