Ingredients

  • 4 large bell peppers
  • 1 cup quinoa
  • 1 1/2 cups vegetable broth
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 cup diced tomatoes
  • 1 cup cooked black beans
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 1/2 cup shredded cheese (optional)

Instructions

  1. Rinse the quinoa under cold water and drain.
  2. In a saucepan, sauté the onion and garlic until softened.
  3. Add the quinoa, vegetable broth, diced tomatoes, black beans, cumin, paprika, salt, and pepper. Bring to a boil, then reduce heat and simmer for 15-20 minutes until the quinoa is cooked and the liquid is absorbed.
  4. Preheat the oven to 375°F (190°C).
  5. Cut the tops off the bell peppers and remove the seeds and membranes.
  6. Stuff the quinoa mixture into the bell peppers and place them in a baking dish.

  8. Cover the dish with foil and bake for 25-30 minutes until the peppers are tender.
