Ingredients
- 4 large bell peppers
- 1 cup quinoa
- 1 1/2 cups vegetable broth
- 1 onion, diced
- 2 cloves garlic, minced
- 1 cup diced tomatoes
- 1 cup cooked black beans
- 1 teaspoon ground cumin
- 1 teaspoon paprika
- Salt and pepper to taste
- 1/2 cup shredded cheese (optional)
Instructions
- Rinse the quinoa under cold water and drain.
- In a saucepan, sauté the onion and garlic until softened.
- Add the quinoa, vegetable broth, diced tomatoes, black beans, cumin, paprika, salt, and pepper. Bring to a boil, then reduce heat and simmer for 15-20 minutes until the quinoa is cooked and the liquid is absorbed.
- Preheat the oven to 375°F (190°C).
- Cut the tops off the bell peppers and remove the seeds and membranes.
- Stuff the quinoa mixture into the bell peppers and place them in a baking dish.
- If using cheese, sprinkle it on top of the stuffed peppers.
- Cover the dish with foil and bake for 25-30 minutes until the peppers are tender.
- Remove the foil and bake for an additional 5 minutes to melt the cheese (if using).
