Ingredients
- 2 cups red lentils
- 6 cups water
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 teaspoon turmeric
- 1 teaspoon cumin
- 1 teaspoon paprika
- Salt to taste
- Black pepper to taste
- 2 tablespoons olive oil
Instructions
- Rinse the red lentils under cold water and drain.
- In a large pot, heat the olive oil over medium heat. Add the chopped onion and garlic, and sauté until softened.
- Add the turmeric, cumin, and paprika to the pot, and stir for 1-2 minutes to toast the spices.
- Add the red lentils and water to the pot. Bring to a boil, then reduce heat and simmer for 20-25 minutes, or until the lentils are soft.
- Season with salt and black pepper to taste.
- Using an immersion blender, blend the soup until smooth. Alternatively, transfer the soup to a blender in batches and blend until smooth.
- Serve the soup hot, garnished with a drizzle of olive oil and a sprinkle of paprika if desired.
