Qi-Revitalizing Red Lentil Soup (气复苏红扁豆汤)

Ingredients

  • 2 cups red lentils
  • 6 cups water
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 teaspoon turmeric
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • Salt to taste
  • Black pepper to taste
  • 2 tablespoons olive oil

Instructions

  1. Rinse the red lentils under cold water and drain.
  2. In a large pot, heat the olive oil over medium heat. Add the chopped onion and garlic, and sauté until softened.
  3. Add the turmeric, cumin, and paprika to the pot, and stir for 1-2 minutes to toast the spices.
  4. Add the red lentils and water to the pot. Bring to a boil, then reduce heat and simmer for 20-25 minutes, or until the lentils are soft.
  5. Season with salt and black pepper to taste.
  6. Using an immersion blender, blend the soup until smooth. Alternatively, transfer the soup to a blender in batches and blend until smooth.
  7. Serve the soup hot, garnished with a drizzle of olive oil and a sprinkle of paprika if desired.
