Ingredients

  • 2 sea cucumbers, rehydrated and sliced
  • 200g green leafy vegetables (such as bok choy or spinach)
  • 3 slices of ginger
  • 2 cloves of garlic, minced
  • 2 green onions, chopped
  • 2 tablespoons soy sauce
  • 1 tablespoon oyster sauce
  • 1 teaspoon sugar
  • 1/2 teaspoon salt
  • 1/4 teaspoon white pepper
  • 2 cups chicken broth
  • 2 tablespoons vegetable oil

Instructions

  1. Blanch the sea cucumber slices in boiling water for 2 minutes, then drain and set aside.
  2. Blanch the green vegetables in the same water for 1 minute, then drain and set aside.
  3. Heat the vegetable oil in a wok or large skillet over medium heat. Add the ginger, garlic, and green onions, and stir-fry for 1 minute.
  4. Add the sea cucumber slices to the wok and stir-fry for 2 minutes.
  5. Pour in the soy sauce, oyster sauce, sugar, salt, and white pepper. Stir to combine.
  6. Pour in the chicken broth and bring to a simmer. Cover and cook for 20 minutes.
  7. Add the blanched green vegetables to the wok and cook for an additional 3-5 minutes, until the vegetables are tender.
  8. Transfer the braised sea cucumber and green vegetables to a serving dish and serve hot.
