Ingredients
- 2 sea cucumbers, rehydrated and sliced
- 200g green leafy vegetables (such as bok choy or spinach)
- 3 slices of ginger
- 2 cloves of garlic, minced
- 2 green onions, chopped
- 2 tablespoons soy sauce
- 1 tablespoon oyster sauce
- 1 teaspoon sugar
- 1/2 teaspoon salt
- 1/4 teaspoon white pepper
- 2 cups chicken broth
- 2 tablespoons vegetable oil
Instructions
- Blanch the sea cucumber slices in boiling water for 2 minutes, then drain and set aside.
- Blanch the green vegetables in the same water for 1 minute, then drain and set aside.
- Heat the vegetable oil in a wok or large skillet over medium heat. Add the ginger, garlic, and green onions, and stir-fry for 1 minute.
- Add the sea cucumber slices to the wok and stir-fry for 2 minutes.
- Pour in the soy sauce, oyster sauce, sugar, salt, and white pepper. Stir to combine.
- Pour in the chicken broth and bring to a simmer. Cover and cook for 20 minutes.
- Add the blanched green vegetables to the wok and cook for an additional 3-5 minutes, until the vegetables are tender.
- Transfer the braised sea cucumber and green vegetables to a serving dish and serve hot.
