Qorma (afghan Lamb Stew)

Ingredients

  • 2 lbs lamb, cut into chunks
  • 2 onions, finely chopped
  • 4 cloves garlic, minced
  • 1-inch piece of ginger, grated
  • 1 cup plain yogurt
  • 2 tomatoes, diced
  • 2 tbsp vegetable oil
  • 1 tsp ground turmeric
  • 1 tsp ground coriander
  • 1 tsp ground cumin
  • 1/2 tsp ground cinnamon
  • 1/4 tsp ground cardamom
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. Heat the vegetable oil in a large pot over medium heat. Add the onions and cook until they are soft and translucent.
  2. Add the garlic, ginger, and spices to the pot. Cook for 2-3 minutes until fragrant.
  3. Add the lamb chunks to the pot and brown on all sides.
  4. Stir in the yogurt and tomatoes, then add enough water to cover the meat.
  5. Bring the stew to a boil, then reduce the heat to low and simmer for 1.5 to 2 hours, or until the meat is tender.
  6. Season with salt and pepper to taste.
  7. Garnish with fresh cilantro before serving.
