Qorma (afghan Lamb Stew)
Qorma is a traditional Afghan lamb stew that is rich in flavor and perfect for a comforting meal. This dish is often served with naan or rice, making it a hearty and satisfying option for any occasion.
Ingredients
- 2 lbs lamb, cut into chunks
- 2 onions, finely chopped
- 4 cloves garlic, minced
- 1-inch piece of ginger, grated
- 1 cup plain yogurt
- 2 tomatoes, diced
- 2 tbsp vegetable oil
- 1 tsp ground turmeric
- 1 tsp ground coriander
- 1 tsp ground cumin
- 1/2 tsp ground cinnamon
- 1/4 tsp ground cardamom
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions
- Heat the vegetable oil in a large pot over medium heat. Add the onions and cook until they are soft and translucent.
- Add the garlic, ginger, and spices to the pot. Cook for 2-3 minutes until fragrant.
- Add the lamb chunks to the pot and brown on all sides.
- Stir in the yogurt and tomatoes, then add enough water to cover the meat.
- Bring the stew to a boil, then reduce the heat to low and simmer for 1.5 to 2 hours, or until the meat is tender.
- Season with salt and pepper to taste.
- Garnish with fresh cilantro before serving.
