Qorma (afghan-style Beef And Potato Curry)
Qorma is a traditional Afghan dish that features tender beef and hearty potatoes in a rich and flavorful curry sauce. This comforting and aromatic dish is perfect for a cozy family meal or a special gathering.
Ingredients
- 1 lb beef, cut into cubes
- 2 large potatoes, peeled and cubed
- 1 onion, finely chopped
- 3 cloves garlic, minced
- 1-inch piece of ginger, grated
- 2 tomatoes, chopped
- 2 tbsp vegetable oil
- 1 tsp ground turmeric
- 1 tsp ground coriander
- 1 tsp ground cumin
- 1/2 tsp cayenne pepper
- Salt to taste
- 2 cups water
Instructions
- Heat the vegetable oil in a large pot over medium heat. Add the chopped onion and cook until softened.
- Add the minced garlic, grated ginger, and chopped tomatoes. Cook until the tomatoes break down and form a thick sauce.
- Add the beef cubes to the pot and brown them on all sides.
- Stir in the ground turmeric, coriander, cumin, cayenne pepper, and salt. Cook for a few minutes to toast the spices.
- Pour in the water and bring the mixture to a boil. Reduce the heat, cover the pot, and simmer for 45 minutes.
- Add the cubed potatoes to the pot and continue to simmer for an additional 15 minutes, or until the beef and potatoes are tender.
- Adjust the seasoning if needed and serve the Qorma hot with rice or bread.
