Qorma (lamb And Chickpea Curry)

Ingredients

  • 1 lb lamb, cut into cubes
  • 1 cup cooked chickpeas
  • 2 onions, finely chopped
  • 3 garlic cloves, minced
  • 1-inch piece of ginger, grated
  • 2 tomatoes, diced
  • 1/2 cup plain yogurt
  • 2 tbsp vegetable oil
  • 1 tsp ground turmeric
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1/2 tsp cayenne pepper
  • Salt to taste
  • Fresh cilantro for garnish

Instructions

  1. Heat the vegetable oil in a large pot over medium heat. Add the onions and cook until they are soft and golden.
  2. Add the garlic, ginger, and lamb cubes to the pot. Cook until the lamb is browned on all sides.
  3. Stir in the turmeric, cumin, coriander, and cayenne pepper. Cook for a few minutes until the spices are fragrant.
  4. Add the diced tomatoes and yogurt to the pot. Stir well to combine all the ingredients.
  5. Pour in enough water to cover the lamb, then bring the mixture to a boil. Reduce the heat, cover the pot, and simmer for 45 minutes to 1 hour, or until the lamb is tender.
  6. Add the cooked chickpeas to the pot and simmer for an additional 10 minutes.
  7. Season with salt to taste and garnish with fresh cilantro before serving.
