Qorma (lamb And Chickpea Curry)
Qorma is a traditional Kurdish dish that combines tender lamb with hearty chickpeas in a rich and flavorful curry sauce. This comforting and aromatic dish is perfect for a cozy family dinner or a special occasion.
Ingredients
- 1 lb lamb, cut into cubes
- 1 cup cooked chickpeas
- 2 onions, finely chopped
- 3 garlic cloves, minced
- 1-inch piece of ginger, grated
- 2 tomatoes, diced
- 1/2 cup plain yogurt
- 2 tbsp vegetable oil
- 1 tsp ground turmeric
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1/2 tsp cayenne pepper
- Salt to taste
- Fresh cilantro for garnish
Instructions
- Heat the vegetable oil in a large pot over medium heat. Add the onions and cook until they are soft and golden.
- Add the garlic, ginger, and lamb cubes to the pot. Cook until the lamb is browned on all sides.
- Stir in the turmeric, cumin, coriander, and cayenne pepper. Cook for a few minutes until the spices are fragrant.
- Add the diced tomatoes and yogurt to the pot. Stir well to combine all the ingredients.
- Pour in enough water to cover the lamb, then bring the mixture to a boil. Reduce the heat, cover the pot, and simmer for 45 minutes to 1 hour, or until the lamb is tender.
- Add the cooked chickpeas to the pot and simmer for an additional 10 minutes.
- Season with salt to taste and garnish with fresh cilantro before serving.
