Qorovot (tangy Tomato And Lentil Soup)

Ingredients

  • 1 cup red lentils, rinsed
  • 4 cups vegetable broth
  • 1 onion, chopped
  • 3 tomatoes, diced
  • 2 garlic cloves, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 1/2 teaspoon turmeric
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • Fresh cilantro for garnish

Instructions

  1. In a large pot, heat the olive oil over medium heat.
  2. Add the chopped onion and minced garlic, and sauté until the onion is translucent.
  3. Stir in the diced tomatoes, ground cumin, paprika, turmeric, salt, and pepper. Cook for 5 minutes.
  4. Add the rinsed red lentils and vegetable broth to the pot. Bring to a boil, then reduce heat and simmer for 30-35 minutes, or until the lentils are tender.
  5. Adjust the seasoning if needed. Serve the qorovot hot, garnished with fresh cilantro.
