Qorovot is a traditional Tajik soup known for its tangy flavor and hearty texture. This nutritious soup is a popular dish in Tajik cuisine, perfect for warming up on a cold day.
Ingredients
- 1 cup red lentils, rinsed
- 4 cups vegetable broth
- 1 onion, chopped
- 3 tomatoes, diced
- 2 garlic cloves, minced
- 1 teaspoon ground cumin
- 1 teaspoon paprika
- 1/2 teaspoon turmeric
- Salt and pepper to taste
- 2 tablespoons olive oil
- Fresh cilantro for garnish
Instructions
- In a large pot, heat the olive oil over medium heat.
- Add the chopped onion and minced garlic, and sauté until the onion is translucent.
- Stir in the diced tomatoes, ground cumin, paprika, turmeric, salt, and pepper. Cook for 5 minutes.
- Add the rinsed red lentils and vegetable broth to the pot. Bring to a boil, then reduce heat and simmer for 30-35 minutes, or until the lentils are tender.
- Adjust the seasoning if needed. Serve the qorovot hot, garnished with fresh cilantro.
