Ingredients
- 1 cup red lentils, rinsed
- 2 tablespoons vegetable oil
- 1 onion, finely chopped
- 3 garlic cloves, minced
- 2 tomatoes, diced
- 1 teaspoon ground cumin
- 1 teaspoon paprika
- 4 cups vegetable broth
- Salt and pepper to taste
Instructions
- In a large pot, heat the vegetable oil over medium heat.
- Add the chopped onion and minced garlic, and sauté until the onion is translucent.
- Add the diced tomatoes, ground cumin, and paprika. Cook for 5 minutes, stirring occasionally.
- Stir in the rinsed red lentils and vegetable broth. Bring the mixture to a boil, then reduce the heat and simmer for 30 minutes, or until the lentils are tender.
- Season with salt and pepper to taste.
