Ingredients

  • 1 cup red lentils, rinsed
  • 2 tablespoons vegetable oil
  • 1 onion, finely chopped

  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 4 cups vegetable broth
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat the vegetable oil over medium heat.
  2. Add the chopped onion and minced garlic, and sauté until the onion is translucent.
  3. Add the diced tomatoes, ground cumin, and paprika. Cook for 5 minutes, stirring occasionally.
