Ingredients
- 1.5 lbs boneless lamb, cut into cubes
- 1 onion, finely chopped
- 3 garlic cloves, minced
- 1 cup dried apricots
- 1/2 cup slivered almonds
- 2 cups chicken or beef broth
- 1 tsp ground cumin
- 1/2 tsp ground cinnamon
- 1/4 tsp ground ginger
- 1/4 tsp ground nutmeg
- Salt and pepper to taste
- 2 tbsp olive oil
Instructions
- In a large pot, heat the olive oil over medium heat. Add the chopped onion and minced garlic, and sauté until softened.
- Add the lamb cubes to the pot and brown on all sides.
- Stir in the ground cumin, cinnamon, ginger, and nutmeg, coating the lamb evenly with the spices.
- Pour in the chicken or beef broth, and bring the stew to a simmer. Cover and cook for 1.5 hours, or until the lamb is tender.
- Add the dried apricots and slivered almonds to the pot, and continue to simmer for an additional 15 minutes.
- Season the stew with salt and pepper to taste, and adjust the spices if needed.
- Serve the Qozhaya hot, accompanied by rice or flatbread.
