Qozi (kurdish Lamb Stew)

Ingredients

  • 2 lbs lamb, cut into chunks
  • 2 onions, finely chopped
  • 3 cloves garlic, minced
  • 2 carrots, sliced
  • 1 cup basmati rice
  • 1/2 cup raisins
  • 1 teaspoon ground cumin
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground cardamom
  • 4 cups chicken or beef broth
  • Salt and pepper to taste

Instructions

  1. In a large pot, brown the lamb chunks over medium heat.
  2. Add the onions and garlic, and cook until softened.
  3. Stir in the carrots, rice, raisins, cumin, cinnamon, and cardamom.
  4. Pour in the broth and season with salt and pepper.
  5. Bring the stew to a boil, then reduce the heat and let it simmer for 1.5 to 2 hours, or until the lamb is tender and the rice is cooked.
  6. Adjust the seasoning if needed and serve hot.
