Qozi (kurdish Lamb Stew)
Qozi is a traditional Kurdish lamb stew that is rich in flavor and perfect for a comforting meal. This hearty dish is a staple in Kurdish cuisine and is often served during special occasions and gatherings.
Ingredients
- 2 lbs lamb, cut into chunks
- 2 onions, finely chopped
- 3 cloves garlic, minced
- 2 carrots, sliced
- 1 cup basmati rice
- 1/2 cup raisins
- 1 teaspoon ground cumin
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground cardamom
- 4 cups chicken or beef broth
- Salt and pepper to taste
Instructions
- In a large pot, brown the lamb chunks over medium heat.
- Add the onions and garlic, and cook until softened.
- Stir in the carrots, rice, raisins, cumin, cinnamon, and cardamom.
- Pour in the broth and season with salt and pepper.
- Bring the stew to a boil, then reduce the heat and let it simmer for 1.5 to 2 hours, or until the lamb is tender and the rice is cooked.
- Adjust the seasoning if needed and serve hot.
