Qozon (assyrian Lamb And Apricot Tagine)

Ingredients

  • 1.5 lbs lamb shoulder, cut into chunks
  • 1 onion, finely chopped
  • 3 cloves garlic, minced
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1/2 tsp ground cinnamon
  • 1/2 tsp ground turmeric
  • 1/2 cup dried apricots
  • 2 cups chicken broth
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large tagine or Dutch oven over medium heat.
  2. Add the lamb chunks and brown on all sides, then remove from the pot and set aside.
  3. Add the chopped onion to the pot and cook until softened, about 5 minutes.
  4. Stir in the minced garlic, ground cumin, coriander, cinnamon, and turmeric, and cook for 1-2 minutes until fragrant.
  5. Return the browned lamb to the pot and add the dried apricots and chicken broth.
  6. Bring the mixture to a simmer, then reduce the heat to low, cover, and cook for 1.5 to 2 hours, or until the lamb is tender.
  7. Season with salt and pepper to taste before serving.
