Ingredients
- 4 quails, cleaned and deboned
- 1 cup mostarda di frutta (Italian fruit mustard)
- 1/2 cup breadcrumbs

- Salt and pepper to taste
- 4 slices pancetta or bacon
- 2 tablespoons olive oil
Instructions
- Preheat the oven to 375°F (190°C).
- In a bowl, mix together the mostarda, breadcrumbs, Parmigiano-Reggiano cheese, parsley, salt, and pepper.
- Stuff each quail with the mostarda mixture and wrap a slice of pancetta or bacon around each quail.
- Secure the pancetta with kitchen twine.
- Heat the olive oil in an ovenproof skillet over medium-high heat.
- Sear the quails on all sides until the pancetta is crispy, about 3 minutes per side.
- Transfer the skillet to the preheated oven and roast the quails for 20-25 minutes, or until they are cooked through.
- Remove the quails from the oven and let them rest for 5 minutes before serving.
