Ingredients

  • 4 quails, cleaned and deboned
  • 1 cup mostarda di frutta (Italian fruit mustard)
  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmigiano-Reggiano cheese
  • 2 tablespoons chopped fresh parsley
  • Salt and pepper to taste
  • 4 slices pancetta or bacon
  • 2 tablespoons olive oil

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a bowl, mix together the mostarda, breadcrumbs, Parmigiano-Reggiano cheese, parsley, salt, and pepper.
  3. Stuff each quail with the mostarda mixture and wrap a slice of pancetta or bacon around each quail.
  4. Secure the pancetta with kitchen twine.
  5. Heat the olive oil in an ovenproof skillet over medium-high heat.
  6. Sear the quails on all sides until the pancetta is crispy, about 3 minutes per side.
  7. Transfer the skillet to the preheated oven and roast the quails for 20-25 minutes, or until they are cooked through.
  8. Remove the quails from the oven and let them rest for 5 minutes before serving.
