Quark Cheesecake With Berry Compote

Ingredients

  • 500g quark cheese
  • 200g sugar
  • 4 eggs
  • 1 tsp vanilla extract
  • 100g unsalted butter, melted
  • 200g graham cracker crumbs
  • 500g mixed berries (strawberries, blueberries, raspberries)
  • 50g powdered sugar
  • 1 lemon, juiced

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, mix the quark cheese, sugar, eggs, and vanilla extract until smooth.
  3. In a separate bowl, combine the melted butter and graham cracker crumbs. Press the mixture into the bottom of a springform pan to form the crust.
  4. Pour the quark cheese mixture over the crust and smooth the top with a spatula.
  5. Bake in the preheated oven for 45 minutes, or until the edges are set and the center is slightly jiggly.
